Les Amis, as it goes without saying, is one of my favourite restaurants in Singapore. Always delivering exceptional cuisine and amazing wines to pair.

This visit, we went to the Magnum Room for the first time. As it was a special occasion, I arranged for a special menu featuring my favourites (as well as a particular dish I wanted to try) and two half-bottles of wine.

As per usual, the meal started with a bread basket.

The half-bottle of Chateau Latour 2000 which we arranged for beforehand. The lovely sommelier decanted it expertly beforehand, allowing us to fully enjoy such an exceptional wine that night.

Then came this amuse bouche of lobster jelly with caviar.

Lobster Jelly with Kristal Caviar

A close up of those luscious, precious pearls.

A spring classic - beans tartlet.

Poached egg with watercress.

Watercress soup poured at the table.

Ooooo that yolk. Poking the yolk is always part of the fun!

Another spring classic at Les Amis - the white asparagus jelly with caviar. It debuted as a dish a few years back, then became just one of the amuse bouches and is now back as a full-fledged dish!

Succulent, huge white asparagus. Produce is always amazing here.

The new dish which I specifically asked for - crispy scaled amadai. I have always considered fish to be Les Amis' weak spot, but they have been improving drastically recently. This fish dish was simply amazing. I'm not too sure what took them so long to have amadai on the menu but better late than never!

Main course - Spring veal chop.

Carrots to whet your appetite before the main meat.

Cleanly plated veal with perfectly cooked green asparagus.

We had 2 desserts as usual.

Rhubarb with sauternes ice cream. Everything about this dish was on point.

Mango with rice milk in a sugar sphere. Sugar spheres are a staple here at Les Amis, packed with different ingredients every season. Always technically perfect, always satisfying.

Some herb sorbet (which included coriander!)

Petit Fours and Mignardises.

Wines for the night.
